Meet Papillon and Lauren

Chef Gio has been a large part of our family for years.  We had our first dates over dinner at Gio’s Villa Vancheri.  We celebrated birthdays, holidays, accomplishments, and any other occasion at Gio’s.  Papillon proposed at Gio’s, we were married at Gio’s, we raised our babies at Gio’s.  It is only fitting that we continue Chef Gio’s legacy as part of our own.  We are all family here, and we would like to invite you to sit back and relax, and dine with us.

Meet the Chef

Chef Patrick Merritt is a New Orleans native who recognized his passion for cooking at a young age.  As a teenager, Chef Merritt would regularly cook for his family.  Those family dinners led him to pursue a degree in Culinary Arts from Nichols State University at the Chef John Folse Culinary Institute.  Through school, Patrick got the opportunity to take part in the Disney College Program.  Chef Merritt was also talented enough to study abroad at the Paul Bocuse Institute in France.  A few years ago, Patrick and his wife were given the opportunity to spend a year cooking in the Black Forest area of Germany.  There he learned traditional German cuisine and sausage making.

Chef Merritt has been in the restaurant industry for 15 years, and has done everything from serving, bartending, and of course cooking.  He has cooked in many kitchens in New Orleans, including Restaurant August, Luke and Cochon Butcher.      

When he isn’t cooking at the restaurant, Patrick is spending time with his wife and daughter.
